MIMIKOS LIMITED EDITION Wiener Chicken Schnitzel

For the Politiki Salad:
200 g shredded white cabbage
4 grated carrots
1 red pepper
2 stalks of celery
25 ml white vinegar
25 ml olive oil
salt
pepper

Preparation

Preheat the oven to 200°C (392°F). Place the Wiener schnitzel on a baking sheet lined with parchment paper and bake for 10 minutes, or fry them in a deep pan for 5 minutes.

For the Greek Salad:
In a large bowl, add the cabbage, grated carrot, finely chopped celery, thinly sliced red bell pepper, vinegar, olive oil, salt, and pepper. Mix very well.

For the Wine Sauce:
In a small saucepan, bring the wine to a boil until the liquid reduces and becomes very thick, cooking for at least 5 minutes. Then add the chicken broth and cook for another 5 minutes. Finally, add the cream, salt, and pepper, and give it a final boil to ensure it thickens well.

Serve the schnitzel sliced thin, with the salad on the side, and the wine sauce in a small dipping bowl.
