Because a quality chicken starts from an egg and then a healthy chick...
The eggs are received at our incubator in Dirfys, Evia, and are checked by veterinarians as well as by the company’s microbiological laboratory. Any contraindications are also sent to the relevant State Laboratory. The incubation lasts 21 days under ideal biological conditions, which are monitored and recorded by electronic systems. Once the incubation is complete, a further laboratory and quality control of the chicks is conducted, after which they are transferred to the breeding farms.
IN THE FARMS

Before placing the chicks in the monitored and inspected breeding farms, cleaning and disinfection are performed to maintain excellent hygiene conditions for the chickens. The rearing of the birds in the farm lasts for 40-50 days, during which the conditions are extensively monitored by specialized supervisors, veterinarians, and graduates of animal science. Laboratory analyses are conducted to ensure their proper and smooth development. Each batch of eggs, after being incubated in a specific incubator, is placed in a designated farm, collected, and sent for final veterinary and laboratory inspection, aiming to approve the slaughter license, after which it is directed to the processing and packaging unit. This entire process allows our veterinarians to know the biological identity of each chicken in every batch.
IN THE FEED
Because a quality chicken must be properly fed; for this reason, we want to have absolute control over the feed of our chickens.
The diet and healthy development of the chickens are completely monitored and formulated by specialized nutritionists, as the animal feeds are produced in our own mill. The feeds are 100% plant-based, rich in vitamins and trace elements, with certification from AGROCERT. The raw materials used are strictly tested for the absence of pesticides and herbicides, and each batch of feed that leaves the mill is laboratory-tested for the absence of pathogenic microorganisms that could contaminate the flocks.
IN THE SLAUGHTERING PROCESS
Because a quality chicken must undergo a slaughtering process that does not compromise its quality with potential contamination or deterioration due to poor conditions.
The MIMIKOS chickens, after receiving a certificate of suitability from state veterinarians, are transported to the slaughterhouse. There, a modern computer system records the identity of each bird, linking it to the breeding chamber from which it originated, the incubation date, and the specific batch of eggs. This information continuously follows the chickens from entry to loading onto refrigerated trucks for distribution to stores. This traceability is crucial for the complete quality control of the entire production process.
After slaughter and plucking, the chickens are sent to an automatic evisceration system. Here, without human intervention, the entrails are removed, and the meat is cleaned both internally and externally. The evisceration technology used is groundbreaking, and in some phases, the applied method is considered the most modern worldwide. The goal is to prevent any potential contamination of the edible meat from inedible parts of the animal. At the end of this process, the chickens undergo inspection at three control points by veterinarians from both the company and the relevant Directorate of the Ministry of Agriculture. It is important to note that this inspection is thorough and not random, meaning that each chicken is individually checked.

DURING THE COOLING PROCESS
MIMIKOS chickens universally apply modern, safe, and healthier air chilling technology, specifically the maturation chilling technique. This air chilling technology eliminates any risk of contamination from contact with water and prevents the dripping that can occur during packaging, which poses a risk of spoilage to the chicken. It also allows the meat's temperature to drop uniformly and at a rate that ensures both hygiene and the tenderness of the meat.
IN PROCESSING
Because a good chicken should be processed with procedures that minimize the risk of spoilage.
The chickens enter the cutting and packaging area under refrigerated conditions, where a comprehensive quality control check and weighing of the chickens take place. Each chicken is then categorized based on weight and directed to the appropriate production line, whether for whole chickens, cut pieces, or chicken delicacies. The packaging for every MIMIKOS product always has a specific and verified weight, which is guaranteed by the company itself.
IN PACKAGING
Why a good chicken needs packaging that protects it...
With MIMIKOS packaged chickens, you always know that the product has not been touched by human hands from the moment it was packaged under strict hygiene and safety conditions until the time you unwrap it to cook. Sealed within its packaging, it is protected from any potential contamination until it reaches you, retaining all the quality characteristics that define MIMIKOS packaged chickens. Now, with their new revolutionary packaging featuring a protective atmosphere, they ensure even higher safety and hygiene for the products.
In the Protective Atmosphere packaging of MIMIKOS chickens, the plastic film that used to wrap them is replaced by a special multi-layer film that seals the product airtight and prevents atmospheric air from coming into contact with it. The air is removed from the packaging and replaced with a gas mixture (oxygen and carbon dioxide) that has microbiostatic properties. These gases are certified as safe for contact with food and inhibit the growth of microorganisms, resulting in better preservation of the product's freshness until the expiration date, making it even safer for a longer period.
With Protective Atmosphere packaging, the shelf life of the product is extended without the addition of preservatives or additives, providing you with greater convenience as you can keep the packaged product for a longer time in your refrigerator without needing to freeze it, which would compromise its quality. Of course, with the expiration date printed on each package, you can easily check how long you can use it, knowing that the chicken will remain fresh until that date.
IN THE METHOD OF DISTRIBUTION

Ensuring quality does not stop at the production of the final product. To maintain the high nutritional value of MIMIKOS chicken and ensure it is completely safe for the consumer, it is essential to adhere to the cold chain.
In the production area, the temperature is maintained at 4°C, while in the packaging department, it is at 2°C. From this point onward, the product remains at this stable temperature. The storage areas are equipped with air-conditioned hoods through which the transfer to the company’s refrigerated trucks takes place, minimizing cooling losses.
Both the storage facilities and the refrigerated trucks are equipped with recording devices that monitor the temperature of the area and alert technicians in the event of a temperature rise, even by 1°C.
IN QUALITY CONTROL
Why a good chicken must undergo strict controls to ensure that all processes and quality specifications have been meticulously followed.
At every step of the production process, from the egg to the shelf, a series of quality controls is conducted by a team of approximately 40 specialized individuals (veterinarians, chemists, biologists, food technologists, animal scientists, etc.) with the aim of certifying not only the absolute safety of the product but also its nutritional value, taste, and overall quality.
For the inspectors' oversight, in addition to the Official State Veterinary Service, collaborations have been developed with a wide network of specialized state and private testing laboratories in Greece and Europe.
Thus, it can confidently claim that its products meet the strictest specifications.
In 2007, the procedures followed in the production and distribution of MIMIKOS chickens were certified with ISO 22,000 by ELOT. ISO 22,000 is the most modern and comprehensive standard for the Food Industry and encompasses the Hazard Analysis Critical Control Points (HACCP). The company's Microbiological Laboratory is accredited according to ISO 17025 (Accreditation Number 759-3).
