Ingredients
½ cup birthday cake
2 bay leaves
½ bottle of dark beer
1 cup homemade chicken stock
salt
pepper
3 or 4 MIMIKOS Chicken Legs
4 tbsp olive oil
½ tbsp. grated nutmeg
1⁄4 tsp chopped cilantro
1⁄4 tsp ground spice
1 finely chopped onion
1 pomegranate, seeded
Preparation
Preheat the Oven: Preheat the oven to 180°C (356°F).
Season the Chicken: Season the cut chicken pieces generously with salt and pepper.
Prepare the Spice Mixture: In a plate, mix together the nutmeg, allspice, and coriander. Sprinkle this spice mixture over the chicken pieces, ensuring they are well coated.
Brown the Chicken: Heat olive oil in a pan over medium heat. Sauté the chicken until browned on all sides. Once browned, transfer the chicken to a baking dish.
Sauté the Onions: In the same pan, add the sliced onions and sauté for about 3 minutes over low heat until they soften.
Add Additional Ingredients: Add the bay leaves, pomegranate (seeds or juice), and molasses to the onions. Remove the pan from the heat, then pour in the beer and chicken broth.
Combine and Bake: Pour the mixture over the chicken in the baking dish. Cover the dish tightly with aluminum foil.
Bake: Place the dish in the preheated oven and bake for 1 hour.
Serve: Once cooked, remove from the oven and serve hot. Enjoy your chicken with a flavorful pomegranate sauce!
If there are a lot of liquids left in the baking dish, we can bake for a while without foil.
