½ ματσάκι ψιλοκομμένος μαϊντανός
1 σκελίδα σκόρδο
2 φιλέτα αντσούγιας
1 κ.σ. κάπαρη
2 κ.σ. ξίδι
5 κ.σ. ελαιόλαδο
Ingredients
For the parsley sauce:
½ bunch of chopped parsley
1 clove of garlic
2 anchovy fillets
1 tbsp caper
2 tbsp vinegar
5 tbsp olive oil
2 packages of MIMIKOS Chicken Drumsticks
1 medium celery root
4 beets
2 large sweet potatoes
2 tbsp thyme
1 tbsp oregano
olive oil
salt, pepper
Preparation
Prepare the Vegetables: Clean the vegetables and cut them into uniform sticks, similar to French fries. Place the vegetables in a deep baking dish.
Season the Chicken: In a bowl, mix 1/3 cup of olive oil with oregano, thyme, salt, and pepper. Dip the chicken thighs into the mixture, ensuring they are well coated, and place them on top of the vegetables.
Prepare for Baking: Pour any remaining olive oil mixture over the vegetables. Add 1 cup of water to the baking dish.
Bake: Place the dish in a preheated oven at 200ºC (392ºF) with the fan on and bake for about 40 minutes.
Prepare the Parsley Sauce: While the chicken is baking, prepare the parsley sauce by placing all the sauce ingredients into a blender or food processor and blending until smooth.
Serve: Once the chicken is cooked, divide the chicken thighs and vegetables onto plates. Drizzle with the parsley sauce and serve.
