2 spring onions

100 g olive oil
half a bunch of fresh coriander or parsley

4 leaves of red lola
MIMIKOS Spicy Chicken Schnitzel
4 baguettes
200 g cream cheese
100 g corn
for the guacamole:
2 avocados
1 tomato
Preparation
Peel the avocados, cut them into small pieces, and place them in a blender. Add lime juice, olive oil, salt, and pepper. Blend until smooth and pour into a bowl.
To the blended guacamole, add finely chopped green onions, coriander or parsley, and finally, diced tomatoes without seeds.
Preheat the oven to 200ºC (392ºF), place the spicy schnitzels on parchment paper, and bake for 10 minutes, or in a deep frying pan, fry for 3 minutes. In the same oven, bake the baguettes for 5 minutes.
For Assembling the Sandwich:
Cut the bread lengthwise, add red lettuce leaves to the bottom, then spread guacamole on top. Next, place a piece of schnitzel cut lengthwise, add cream cheese, and finish with corn.
Guacamole can be stored in the refrigerator for 3-4 days by covering it with plastic wrap.
