Chicken Legs

2 Μπούτια Ολόκληρα MIMIKOS
2 μικρές μελιτζάνες
2 χρωματιστές πιπεριές (κόκκινη και κίτρινη)
2 ξερά κρεμμύδια
2 κολοκυθάκια
1 σκ. σκόρδο ψιλοκομμένο
1 ντομάτα
1 κ.σ. μουστάρδα πικάντικη
1 κ.σ. φρέσκο δυόσμο

½ κ.γ. θυμάρι αποξηραμένο
½ κ.γ. ρίγανη αποξηραμένη
2 κ.σ. ελαιόλαδο
1 κ.σ. ξίδι βαλσάμικο
200 γρ. ημίσκληρου τυριού σε κύβους
αλάτι
φρεσκοτριμμένο πιπέρι

Ingredients


½ tbsp. dried thyme
½ tbsp. dried oregano
2 tbsp olive oil
1 tbsp balsamic vinegar
200 g of semi-hard cubed cheese
salt
freshly ground pepper

2 MIMIKOS Chicken Legs
2 small eggplants
2 colored peppers (red and yellow)
2 dry onions
2 zucchini
1 clove of garlic, chopped
1 tomato
1 tbsp spicy mustard
1 tbsp fresh mint

Preparation

First, wash all the vegetables. Cut the eggplants into bite-sized pieces and place them in a large bowl. Cut the onions into cubes and add them. Clean the bell peppers, remove the seeds, and cut them into large cubes. Slice the zucchini into rounds if they are small or into cubes if they are large, and add them to the bowl. Add the diced tomatoes, garlic, mint, thyme, oregano, spicy mustard, balsamic vinegar, salt, pepper, and semi-hard cheese.

Cut the whole chicken thighs into bite-sized pieces and add them to the vegetables. Season with salt and pepper, then drizzle with olive oil. Mix everything together very well.

Divide the mixture evenly into 4 pieces of parchment paper. Fold them into pouches and tie them tightly with kitchen twine. Bake for 1 hour at 180°C (350°F) in a well-preheated oven.

If desired, open the pouches and carefully pour the briam into a baking dish. Return to the oven for an additional 10 minutes to allow the chicken to brown.
