2 μεγάλα κρεμμύδια ψιλοκομμένα
1 σκελίδα σκόρδο ψιλοκομμένη
½ ποτήρι κόκκινο κρασί
1 καρότο ψιλοκομμένο
½ μάτσο σέλινο ψιλοκομμένο
1 κιλό ντομάτες, τριμμένες στον τρίφτη
1 φύλλο δάφνης

1 κουτ. πελτέ ντομάτας
2 μπαχάρι
1 μοσχοκάρυδο
2 κανέλες
αλάτιπιπέρι
ελαιόλαδο
1 κιλό χυλοπίτες
150 γρ. λαδοτύρι τριμμένο
Ingredients
1 tsp. tomato paste
2 spices
1 nutmeg
2 cinnamon sticks
salt and pepper
olive oil
1 kilo of noodles
150 g grated cheese
7 or 8 MIMIKOS Chicken Drumsticks
2 large onions, finely chopped
1 clove of garlic, chopped
½ glass of red wine
1 carrot chopped
½ bunch celery, chopped
1 kilo of tomatoes, grated
1 bay leaf
Preparation
Boil the pasta for about 5 minutes, then cool it well, drizzle with a little oil, and set aside.
In a large pot, heat 6-7 tablespoons of olive oil and sauté the chicken on all sides until it is browned, about 7 minutes. Add the onions, garlic, carrot, and celery, and let them soften slightly before deglazing with the wine. Allow the alcohol to evaporate for 2-3 minutes, then add the tomatoes, tomato paste, and spices.
Let the dish simmer for about an hour until the meat is tender and the sauce has thickened. Season generously with salt and pepper.
Add the pasta to the sauce and cook for an additional 2 minutes. Serve with grated ladotyri cheese.
Depending on your oven, you can reduce the cooking time to 45-50 minutes to keep the dish juicier.
