Ingredients
3 cloves of garlic
salt
2 limes (zest)
olive oil
chili pepper
parsley

10 baby potatoes
3 zucchinis
3 tomatoes
10 basil leaves
1 bunch of green onion
Preparation
In a medium baking dish, arrange the vegetables cut into thick pieces: baby potatoes, zucchini, tomatoes, basil leaves, green onions, and garlic. Season the vegetables with salt and pepper and toss them in the same dish.
Marinate the chicken thighs with olive oil, lime zest, salt, and pepper. Place them on top of the vegetables. Finally, finely chop a chili pepper and sprinkle it along the length of the dish. Bake for 45 minutes at 200ºC (392ºF). Once you take the dish out of the oven, serve it sprinkled with a little fresh parsley.
