500 γρ. ντομάτες τριμμένες

2 κ.γ. θυμάρι

Για το αρωματικό μείγμα:
4 κ.σ. ψιλοκομμένος μαϊντανός
1 σκελίδα σκόρδο τριμμένο
ξύσμα από 2 λεμόνια
Ingredients
For the aromatic mixture:
4 tbsp chopped parsley
1 clove of garlic, grated
zest of 2 lemons
2 packages of MIMIKOS Chicken Drumsticks
2 dry onions
2 cloves of garlic, grated
2 carrots
2 celery stalks
500 g grated tomatoes
½ cup red wine
2 tbsp thyme
2 tbsp royal
olive oil, salt, pepper
Preparation
Prepare the Vegetables: Clean and finely chop the onions. Slice the carrots thinly and finely chop the celery after removing the fibers.
Sauté the Vegetables: In a pot, heat 4-5 tablespoons of olive oil and sauté the vegetables until softened.
Brown the Chicken: Add the chicken thighs to the pot, season with salt and pepper, and cook on high heat for a few minutes until they are browned on all sides.
Add Liquids and Simmer: Pour in the white wine, then add the grated tomatoes, thyme, and basil. Add 1 ½ cups of water, lower the heat, cover the pot, and simmer for 40 minutes.
Prepare the Aromatic Mixture: While the chicken is cooking, prepare the aromatic mixture by mixing the parsley, garlic, and lemon zest.
Serve: Once the dish is ready, sprinkle the aromatic mixture over the chicken thighs and serve.
