2 μελιτζάνες σε κομμάτια
2 κολοκύθια σε κομμάτια
12 μανιτάρια λεύκα στη μέση
2 καρότα κομμένα σε ροδέλες

2 κρεμμύδια κομμένα σε ροδέλες
1 πιπεριά κόκκινη σε ροδέλες
2 πιπεριά πράσινη σε ροδέλες
4 ντομάτες κομμένες σε κύβους
1 μάτσο μαϊντανό ψιλοκομμένο

1 μάτσο δυόσμο ψιλοκομμένο
6 κ.σ. ελαιόλαδο
250 γρ. φέτα κομμένη σε κύβους
αλάτι
πιπέρι
Ingredients
2 onions cut into slices
1 red pepper in rings
2 sliced green peppers
4 diced tomatoes
1 bunch parsley, chopped
7 or 8 MIMIKOS Chicken Drumsticks
2 eggplants in pieces
2 pumpkins, cut into pieces
12 poplar mushrooms in the middle
2 carrots cut into slices
Preparation
Mix Ingredients: In a large bowl, combine all the ingredients except for the feta cheese. Allow the mixture to sit for 10 minutes to let the flavors meld together.
Preheat Oven: Preheat the oven to 180°C (350°F).
Prepare for Baking: Spread the chicken and vegetables in a large baking dish.
Bake: Bake for about 1 hour, turning the chicken and vegetables a few times to ensure even cooking. Add a little water if needed to keep the dish moist.
Add Feta: Once the dish is out of the oven, crumble the feta cheese over the top.
