250 γρ. ελιές
1 πρέζα κύμινο
1 κλωναράκι δενδρολίβανο
χυμός από ½ λεμόνι

Ingredients
250 g slice
250 g olives
1 pinch of cumin
1 sprig of rosemary
juice of ½ lemon
salt
olive oil
1 package of MIMIKOS Chicken Drumsticks
1 kilo of boiled potatoes
2 dry onions
2 tbsp caper
2 tbsp sun-dried tomatoes
1 red pepper
1 tomato
Preparation
Prepare the Chicken: Make a slit in the chicken thighs and open them with your hands. Place the thighs on a sheet of baking paper.
Prepare the Vegetables: In a bowl, combine the halved boiled potatoes, coarsely chopped onions, capers, sun-dried tomatoes, olives, and fresh tomato.
Assemble the Dish: Add the cubed feta cheese to the vegetable mixture. Place the chicken thighs skin-side up among the vegetables.
Add Final Ingredients: Finish the dish by adding a sprig of rosemary, a drizzle of lemon juice, and a splash of olive oil. Season with salt and pepper to taste.
Bake: Preheat the oven to 180°C (356°F) and bake the dish on the middle rack for one hour, until the chicken is crispy and cooked through.
