Ingredients
1 cup of dry white wine
½ cup olive oil
Zest and juice of 1 orange
1 orange in thin slices
1 cinnamon stick
salt
pepper
1 package of MIMIKOS Chicken Thigh Fillet
2 tbsp mustard
1 tbsp honey
1 tbsp dry coriander
2 cups small onions
2 cloves of garlic
3 carrots in strips
Preparation
Season the chicken pieces with salt and pepper, and add mustard, honey, and dried coriander. Mix well and let marinate in the refrigerator for at least one hour.
In a skillet, sauté the scallions in olive oil over medium heat for 3-4 minutes until they begin to color. Add the garlic, carrots, and a cinnamon stick, and sauté for an additional 2-3 minutes.
Add the marinated chicken pieces to the skillet and sauté until lightly browned. Transfer the contents of the skillet to a baking dish.
Add the orange zest and orange slices to the baking dish. Deglaze with the wine and let the alcohol evaporate for 2-3 minutes. Then, add the orange juice.
Preheat the oven to 180°C (356°F). Cover the baking dish with aluminum foil and bake for 30-40 minutes, or until the chicken is tender and the sauce has thickened. If you prefer the chicken to be crispier, remove the aluminum foil during the last 10 minutes of baking.
