




Chicken with Cherry Tomatoes, Olives, Herbs, and Gruyère Cheese

1 Ολόκληρο Κοτόπουλο MIMIKOS
3 κ.σ. ελαιόλαδο
1 μέτριο κρεμμύδι μοιρασμένο σε πολύ λεπτές φέτες
1 φλ. λευκό, ξηρό κρασί
1 κονσέρβα (400 γρ.) ντομάτες ξεφλουδισμένες και ψιλοκομμένες
15 ντοματίνια ολόκληρα
1 σκελίδα σκόρδο ψιλοκομμένη
2 κ.σ. ψιλοκομμένο βασιλικό

1 κ.σ. ψιλοκομμένη φρέσκια ρίγανη
1 κ.σ. ξύσμα λεγενιού
1 φλ. µαύρες ελιές
1 κ.σ. στραγγισμένη κάπαρη
1 κ.γ. ψιλοκομμένο μαϊντανό
250 γρ. γραβιέρα κομμένη σε μικρά κομμάτια
αλάτι
φρεσκοτριµµένο πιπέρι

Ingredients
1 tbsp chopped fresh oregano
1 tbsp pelvic scraping
1 fl. black olives
1 tbsp drained capers
1 tbsp chopped parsley
250 g gruyere cut into small pieces
salt
freshly ground pepper
1 MIMIKOS Whole Chicken
3 tbsp olive oil
1 medium-sized onion, very thinly sliced
1 cup white, dry wine
1 can (400 g) peeled and chopped tomatoes
15 whole cherry tomatoes
1 clove of garlic, chopped
2 tbsp chopped basil

Preparation
Heat the olive oil in a large pot over medium-high heat. Add the chicken pieces and sauté until they are well browned on all sides. Remove the chicken from the pot and set aside on a plate.
In the same pot, add the chopped onion and minced garlic. Sauté until they are lightly browned.
Pour in the white wine and bring it to a boil for about 2 minutes to let the alcohol evaporate.
Add the halved cherry tomatoes, chopped tomato, and fresh herbs to the pot. Stir to combine.
Return the browned chicken to the pot. Lower the heat, cover the pot, and let it simmer gently for about 40 minutes. Stir occasionally and add a little water if needed until the chicken is tender and the sauce has thickened.
Add the lemon slices, olives, and capers to the pot. Let everything simmer together for another 2-3 minutes to heat through.
Sprinkle grated graviera cheese over the top before serving. Enjoy your delicious braised chicken!
