




Chicken with Christmas Stuffing

500 γρ. ρύζι μπασμάτι
150 γρ. κάστανα
ξύσμα και χυμός πορτοκάλι
1 κ.γ. κανέλα
1 κούπα αποξηραμένα βερίκοκα
100 γρ. καβουρδισμένα αμύγδαλα
2 κούπες νερό

1 κλωνάρι σέλερι
2 ξερά κρεμμύδια
μισό πράσο
400 γρ. βοδινό κιμά
φέτες μπέικον
½ πορτοκάλι
½ μήλο

Ingredients
1 tbsp butter
1 stalk of celery
2 dry onions
half a leek
400 g ground beef
bacon slices
½ orange
½ apple
1 MIMIKOS Whole Chicken
500 g basmati rice
150 g chestnuts
orange zest and juice
1 tbsp cinnamon
1 cup dried apricots
100 g roasted almonds
2 cups of water

Preparation
Begin by sautéing the finely chopped onions, leek, and celery in a skillet with some olive oil until they soften. In a separate pan, brown the ground meat until fully cooked.
Once the vegetables are ready, add the cooked ground meat to the skillet. Then, incorporate the chopped bacon, chestnuts, cinnamon, chopped almonds, and dried apricots. Stir in the basmati rice, the zest and juice of half an orange, and 2 cups of water. Bring the mixture to a boil.
After it reaches a boil, remove it from heat and allow it to sit for a few minutes, letting the rice absorb some of the liquid.
Next, take the MIMIKOS chicken and stuff it with the prepared filling. Before sealing the lid of the Dutch oven (or roasting pan) with the chicken, add a few pieces of orange and apple inside for extra aroma.
Place the Dutch oven in the oven and roast at 180°C (350°F) for 1 hour and 20 minutes. In the last 20 minutes of cooking, open the lid to allow the chicken to brown nicely on top.
Once done, remove from the oven and let it rest for a few minutes before serving.
