12 ξερά βερίκοκα κομμένα στη μέση

1 φακελάκι σκόνη σαφράν (¼ του γραμμαρίου)
1 ξύλο κανέλας
½ φλιτζάνι λευκό κρασί
ελαιόλαδο

Ingredients
1 sachet of saffron powder (¼ of a gram)
1 cinnamon stick
½ cup white wine
olive oil
salt
pepper

2 thinly sliced dry onions
2 cloves of garlic, grated
12 dried apricots, halved
4 tbsp coarsely chopped walnuts
2 carrots
1 tbsp grated ginger
Preparation
Mix the saffron with the wine until it is completely dissolved. Clean and slice the carrots into rounds. Sauté the chicken with the onions and garlic in 4-5 tablespoons of olive oil. Add the wine with the saffron, apricots, ginger, cinnamon, and walnut pieces. Season with salt and pepper, add 1 ½ cups of water, and cover the pot. Simmer over medium heat for about 30 minutes. If the dish begins to dry out during cooking, add a little warm water. Once the chicken is cooked, remove the cinnamon stick and serve.
It pairs well with boiled aromatic rice (basmati or jasmine).
