Ingredients
4 cloves of garlic with their dressing
1 small unripe orange
few fresh herbs (oregano-thyme-rosemary or one of your choice)
salt

1 MIMIKOS Whole Chicken (around 1,800 g with 2 kg)
10 potatoes
1⁄2 cup olive oil
1 cup of water
2 lemons (juice)
Preparation
To prepare the juiciest and most delicious lemon chicken, we start by putting on gloves.
First, dry the chicken thoroughly with paper towels, both inside and out. Lightly oil the inside of the chicken with your hand and season the cavity with salt and pepper. Cut the orange into quarters and stuff it into the cavity, along with the herbs and garlic.
Rub a bit of oil over the outside of the chicken and season it with salt and pepper as well. Place the chicken in a roasting pan breast side up, just like you would for a Christmas turkey. Surround it with potatoes cut into wedges or thick slices, season with salt and pepper, and drizzle with lemon juice, water, and olive oil. Sprinkle a few herbs, such as oregano and thyme, over everything.
For Baking: Cover the pan and roast in a preheated oven at 200°C (about 390°F) for 45 minutes. Remove the cover, stir the potatoes, and continue baking for about 45 more minutes, until the potatoes are tender and coated in oil, and the chicken is golden brown all around.
Once the chicken is cooked, let it rest covered for 15 minutes to allow it to regain its juices. This will ensure that the chicken is juicy and tender. Enjoy your meal!
