½ κ.γ. κύμινο
½ κ.γ. κόλιανδρο αλεσμένο
¼ κ.γ. τζίντζερ σκόνη

2 κ.σ. ελαιόλαδο
1 κ.σ. χυμό λεμόνι
2 κ.γ. πάστα ντομάτας
1 κ.γ. αλάτι
Ingredients
¼ tsp chili powder
2 cloves of garlic, melted
2 tbsp olive oil
1 tbsp lemon juice
2 tbsp tomato paste
1 tbsp salt
1 MIMIKOS Whole Chicken
4 tbsp filled with strained yogurt
½ tbsp. cumin
½ tbsp. ground coriander
¼ tsp ginger powder
½ tbsp. black pepper
Preparation
Place all the ingredients, except for the chicken, in a bowl and mix until well combined. Rub the marinade all over the chicken, both inside and out, ensuring it’s evenly coated. Cover the chicken with plastic wrap and place it in the refrigerator until ready to cook. It’s best to prepare it the day before so it marinates thoroughly. Take the chicken out of the fridge an hour before cooking. Preheat the oven to 170ºC (340ºF). Remove the plastic wrap from the dish and roast the chicken uncovered in the oven for 40-50 minutes.
It's good to put the marinade under the chicken skin and marinate for a day so that the aromas and flavors are better absorbed into the chicken.
