Whole Chicken

1 Ολόκληρο Κοτόπουλο MIMIKOS περίπου 2 κιλά
500 γρ. ρύζι γιασμίν
2 ξερά κρεμμύδια
4 καρότα } χρόνος προετοιμασίας 20’
1 κλωνάρι σέλερι χωρίς τα φύλλα
1 φινόκιο
10 φύλλα φρέσκο βασιλικό

1 καυτερή πιπεριά πράσινη ή τσίλι
1 κομμάτι τζίντζερ 80 γρ.
1 λάιμ
2 κ.σ. κάρι } χρόνος ψησίματος 65’
400m ml κρέμα καρύδας
λίγο αλάτι
λίγο ελαιόλαδο

Ingredients


1 hot green pepper or chili
1 piece of ginger 80 g.
1 lime
2 tbsp curry } cooking time 65'
400ml coconut cream
a little salt
a little olive oil

1 MIMIKOS Whole Chicken approx. 2 kg
500 g jasmine rice
2 dry onions
4 carrots } preparation time 20'
1 stalk of celery without the leaves
1 fennel
10 leaves of fresh basil

Preparation

Chop the onions and carrots into thick pieces. Finely chop the celery, fennel, basil, and bell pepper, and add them to the pot. Cut a piece of ginger in half and place one half among the ingredients. Take a whole MIMIKOS chicken and stuff its cavity with a lime and the remaining half of the ginger. Sprinkle the chicken with curry powder, season with salt, drizzle with olive oil, and rub the ingredients into the chicken with your hands. Place the chicken in the pot among the vegetables. Add more curry powder and pour in the coconut cream. Cover with a lid and roast in a preheated oven at 180ºC (350ºF) for 45 minutes, then cook for about 20 minutes more without the lid.

For the rice: Boil 900ml of water, adding salt and a little oil. Add the rice, lower the heat, and simmer covered for about 20 minutes. Enjoy your meal!
