Whole Chicken

1 Ολόκληρο Κοτόπουλο MIMIKOS
20 κρεμμυδάκια στιφάδου
2 σκελίδες σκόρδο τριμμένο
250 γρ. φρέσκα μανιτάρια
1 πράσο
5 φέτες μπέικον
2 φλιτζάνια κόκκινο κρασί

1 δαφνόφυλλο
5 κόκκοι μπαχάρι σπασμένοι
1 κ.σ. ανάμεικτα μυρωδικά (δεντρολίβανο, θυμάρι, βασιλικός)
λίγο αλεύρι
ελαιόλαδο
αλάτι
φρεσκοτριμμένο πιπέρι
4 κ.σ. ψιλοκομμένος μαϊντανός

Ingredients


1 bay leaf
5 allspice, broken
1 tbsp mixed herbs (rosemary, thyme, basil)
some flour
olive oil
salt
freshly ground pepper
4 tbsp chopped parsley

1 MIMIKOS Whole Chicken
20 stewed onions
2 cloves of garlic, grated
250 g fresh mushrooms
1 leek
5 slices of bacon
2 cups of red wine

Preparation

Cut the chicken into portions and place them in a glass dish. Add the wine, allspice, bay leaf, and herbs. Let it marinate in the refrigerator for 3-4 hours. Peel the small pearl onions, clean and slice the leek into thin rings, cut the mushrooms in half, and finely chop the bacon.

Drain the chicken from the marinade, reserving the liquid for cooking. Season the chicken portions with salt and pepper and lightly flour them. Sauté them in 4-5 tablespoons of olive oil for a few minutes. Remove the chicken from the pot and add the bacon, pearl onions, garlic, leeks, and mushrooms. Sauté for a few minutes, then add the chicken back and pour in the reserved marinade. Add 2 cups of water, cover the pot, and reduce the heat.

Cook for 50 minutes to 1 hour, stirring occasionally. When the chicken is done, sprinkle with parsley and serve.
