Chicken Breast Fillet

1 πακέτο Φιλέτο Στήθος Κοτόπουλο MIMIKOS
500 γρ. ρύζι μπασμάτι
200 γρ. αμύγδαλα καβουρδισμένα
100 γρ. σταφίδες ξανθές
100 γρ. βούτυρο
1 λεμόνι
1 κρεμμύδι ξερό

1 ματσάκι καυκαλήθρες
1 ματσάκι μυρώνια
2 αστεροειδείς γλυκάνισους
2 κ.σ. ελαιόλαδο
τζίντζερ
αλάτι

Ingredients


1 bunch of clams
1 bunch of myronia
2 star aniseeds
2 tbsp olive oil
ginger
salt

1 pack of MIMIKOS Chicken Breast Fillet
500 g basmati rice
200 g roasted almonds
100 g blonde raisins
100 g butter
1 lemon
1 dry onion

Preparation

Chop the onion finely and sauté it (in an oven-safe pot) with a little olive oil. Cut the chicken into large pieces and sauté it with the onion until it is cooked through and browned. Finely chop half of your herbs. Cut the lemon into very thin slices.

Add the star anise to the chicken along with a little grated fresh ginger. Add water, the finely chopped almonds, raisins, the herbs, and salt. Stir a little and then add the rice. Add the butter and place the lemon slices on top.

Cover the pot with a lid. Once it boils, place it as it is in a preheated oven at 200ºC (392ºF) for about 20 minutes. Finely chop the remaining herbs and add them in. Stir to combine. Serve and enjoy!
