1 ολόκληρο κοτόπουλο MIMIKOS (~1.5 κιλά), κομμένο σε μερίδες
500 γρ. πατάτες baby, πλυμένες
400 γρ. γλυκοπατάτες, κομμένες σε κύβους
3 πορτοκάλια (χυμός και ξύσμα από 2, φέτες από 1 για γαρνιτούρα)
4 σκελίδες σκόρδο, λιωμένες
3 κ.σ. μέλι

2 κ.σ. ελαιόλαδο
1 κ.σ. μουστάρδα
Αλάτι, φρεσκοτριμμένο πιπέρι
1 κ.γ. θυμάρι (φρέσκο ή αποξηραμένο)
1 κ.γ. ρίγανη
Προαιρετικά: φρέσκο μαϊντανό για γαρνίρισμα
Ingredients
2 tablespoons olive oil
1 tablespoon Dijon mustard
Salt and freshly ground black pepper
1 teaspoon thyme (fresh or dried)
1 teaspoon oregano
Optional: fresh parsley for garnish
1 MIMIKOS Whole Chicken (about 1.5 kg), cut into portions
500 g baby potatoes, washed
400 g sweet potatoes, cut into cubes
3 oranges (juice and zest from 2, slices from 1 for garnish)
4 garlic cloves, crushed
3 tablespoons honey
Preparation
Preheat the oven to 200°C (fan) or 220°C (conventional oven).
For the marinade, in a small bowl mix the honey, olive oil, Dijon mustard, the juice and zest of two oranges, the crushed garlic, salt, pepper, thyme and oregano until well combined.
Rub the chicken thoroughly with the marinade, including inside the cavity. For a deeper flavor, you may refrigerate it for 30 minutes to 2 hours.
In a large bowl, toss the baby potatoes and sweet potatoes with a little olive oil, salt, pepper and one tablespoon of the marinade.
Place the chicken in the center of a baking tray and arrange the potatoes and sweet potatoes around it.
Cover the tray with parchment paper instead of aluminum foil so the chicken does not dry out. Bake for 45 minutes. Then remove the parchment paper and continue baking for another 30 minutes, until the skin is golden brown and the potatoes are nicely glazed.
Garnish with orange slices and fresh parsley before serving.
