Ingredients
2 tbsp olive oil
4 cups of cooked basmati rice
2 tbsp chopped fresh coriander or parsley
4 tbsp roasted almonds, chopped
2 packs of MIMIKOS Chicken Wings
1 cup orange juice
2 tbsp honey
½ cup soy sauce
zest of 1 orange
2 tbsp balsamic
1 tbsp grated fresh ginger
Preparation
Mix the orange juice and zest, honey, soy sauce, balsamic vinegar, olive oil, and ginger. Place the wings in a bowl, pour the mixture over them, and let them marinate in the refrigerator for 2-3 hours. Stir occasionally to ensure they marinate on all sides.
Place the wings with their marinade in a baking dish and roast in a preheated oven at 220ºC (428ºF) for 25 minutes. During the cooking process, turn them over to cook on the other side as well. Mix the rice with the parsley and almonds, and serve with the roasted wings.
