Ingredients
2 tbsp fresh chopped basil or
1 tbsp dry basil
¼ cup white wine
some flour
olive oil
salt
pepper
1 pack of MIMIKOS Chicken Breast Fillet
1 medium dry onion finely chopped
2 cloves of garlic, grated
4 ripe medium tomatoes
1 tbsp tomato paste
2 tbsp chopped sun-dried tomatoes
Preparation
Cut the tomatoes in half, grate them, and place them in a fine sieve to drain. Slice the chicken fillets lengthwise into pieces about half a finger thick. Season the meat slices with salt and pepper and sprinkle with flour.
Heat ¼ cup of olive oil and sauté the fillets over medium-high heat for 3-4 minutes. Flip them to sauté for another 2-3 minutes on the other side, then remove them from the pan.
In another pot, add 2-3 tablespoons of olive oil and sauté the onion and garlic. Add the sun-dried tomatoes and deglaze with the wine. Let it simmer for a few minutes, then add the fresh tomatoes, tomato paste, basil, and a bit of salt.
Place the sautéed fillets into the sauce, simmer on high heat for 7-8 minutes, and serve.
