2 Φιλέτα Στήθος Κοτόπουλου MIMIKOS
2 ώριμες ντομάτες τριμμένες
2 μέτρια κολοκυθάκια τριμμένα
1 μικρό ξερό κρεμμύδι ψιλοκομμένο
1 σκελίδα σκόρδο
2 κ.σ. φρέσκος ψιλοκομμένος βασιλικός
½ φλιτζάνι λευκό κρασί
ελαιόλαδο

Για την αρωματική γέμιση:
3 κ.σ. ψιλοκομμένα φρέσκα αρωματικά (βασιλικός, θυμάρι, δεντρολίβανο)
5 κ.σ. τυρί κρέμα
2 φέτες ψωμί του τοστ τριμμένο
ξύσμα από 1 λεμόνι
Ingredients
For the aromatic filling:
3 tbsp chopped fresh herbs (basil, thyme, rosemary)
5 tbsp cream cheese
2 slices of toast bread, grated
zest of 1 lemon
2 MIMIKOS Chicken Breast Fillet
2 ripe tomatoes, grated
2 medium zucchini, grated
1 small dry onion finely chopped
1 clove of garlic
2 tbsp fresh chopped basil
½ cup white wine
olive oil
salt, pepper
Preparation
Prepare the Aromatic Filling:
Mix the cream cheese with the herbs, lemon zest, breadcrumbs, salt, and pepper, and spread it over the chicken fillet. Brush the outside of the fillet with a little olive oil and season with salt and pepper.
Sauté the onion and garlic in 4 tablespoons of olive oil. Add the grated zucchini, tomatoes, wine, basil, and a little salt. Cook for 2-3 minutes, then pour the sauce into a baking dish.
Place the chicken fillets with the aromatic filling on top of the sauce and cover the baking dish with a sheet of aluminum foil. Bake in a preheated fan oven at 200ºC (392ºF) for 30 minutes, then uncover and continue baking for another 15 minutes.
Slice the chicken breast fillets with a knife and serve with the sauce from the baking dish. Enjoy!
